3 to 4 Garlic Cloves
2 Tablespoons Butter
2 Tablespoons Olive Oil
1 9 oz Bag Fresh Spinach
1 Diced Bell Pepper (your Favorite color)
1 Medium Tomato Diced
1 Cup Shredded Cheddar Cheese
1 Cup Shredded Jack Cheese
4 eggs
1 cup milk
Pie Crust
1 Cup Flour
1/4 Cup Olive Oil
1/2 Teaspoon Salt
5 Tablespoons Cold Water
Combine Flour and salt in mixing bowl and blend then add oil and water and blend with fork or mixer till there are no lumps. sprinkle flour on work surface and on rolling pin press out dough then sprinkle with flour and roll out with rolling pin to fit a 9 inch pie dish, transfer to pie dish and set aside.
Preheat oven to 375
In Medium Skillet place butter, oil, garlic, & pepper over medium heat saute until they are soft then add spinach and let wilt once it is wilted add tomato continue cooking until most of the moisture is cooked out of the vegetables. In mixing bowl combine eggs and milk whisk till smooth Then add 1/4 Cup of each cheese and mix. salt and pepper to taste. Spoon Vegetables into pie crust then pour egg mixture into crust allowing it to blend with vegetables bake for 15 minutes then top with remaining cheese and bake for another 34-40 minutes. It is done when you can pull a clean fork out of the center.
This Quiche goes well with Potatoes O'Brian, Toast, or Fresh Fruit, I personally like it with a Mimosa. For a more refreshing Mimosa try using Pineapple Juice in place of the OJ, One of my favorites !
