1 Small Eggplant
4 eggs
1 teaspoon Italian seasoning
1 teaspoon salt
1 teaspoon pepper
2 cups Italian bread crumbs
4 Tablespoons Parmesan cheese
2 cups of your favorite spaghetti sauce
1 cup Italian cheese mix
Pre heat oven to 400 Cut Eggplant into 3/4 inch slices mix eggs, Italian seasoning, salt, pepper in mixing bowl large enough to dip eggplant circles in, In a second bowl place Italian bread crumbs and Parmesan chees mix together dip eggplant in egg mix then into the bread crumbs evenly coated then dip back into egg mix and again into the bread crumbs Repeat this with each slice place on baking sheet once all are evenly coated place in pre heated oven bake for 10 minutes turn over and bake for another 10 minutes, ladle sauce over each one and evenly distribute Italian cheese blend over them bake for an additional 20 minutes or until cheese is golden brown. You should yield between 4 and 6 servings.
I love eggplant Parmesan but I don't care for it being soggy, by baking it for 10 minutes on each side before adding the sauce it keeps this dish nice and firm.
