Scallop & Riced Cauliflower Curry

Ingredients

1/2 LB 15/20 Scallops

1/2 Yellow Onin

4 Cloves Garlic

1/2 Head Cauliflower

8 Oz Mushrooms

1 Tablespoon Curry Seasoning 

Salt & Pepper to Taste

1 Jar Maya Kaimal Madras Curry Sauce

I like the Spicy but there are medium and Mild to choose from as well


To rice the cauliflower break apart and run through a food processor ( you can use a grater) also put the mushrooms through the food processor  Dice yellow onion and garlic in a larger skillet on a medium heat add 2 Tablespoons olive  oil onions and garlic add salt and pepper to taste saute till soft,  add mushrooms and curry seasoning cook together for 2 to 3 minutes add cauliflower blend all ingredients together cover and let steam mixing occasionally.  


Season Scallops with salt, pepper and garlic powder get skillet hot add 2 to 3 Tablespoons olive oil make sure the oil is hot (if you sprinkle a drop of water in the skillet and it pops you are good place scallops in skillet and and cook about 3 minutes per side  they will get a nice dark brown they should reach an internal temperature of 145 when they are done add sauce to skillet to heat


remove cauliflower from heat place a healthy scoop in middle of dish place 4 scallops around top of cauliflower and ladle sauce over the top garnish with sliced green onions 


 

Other ideas

There is so much you can do to make this dish your own.   Add a variety of your favorite Vegetables,  use  shrimp or chicken change up the garnish to cilantro.   this dish will serve 2 people and is a quick work night dish that taste amazing.
